Use up some leftovers with a few fresh ingredients to make these budget friendly savoury squares. The rice makes them extra filling. - Greer Worsley

Ingredients

  • 1 cup cooked rice
  • 2 zucchini, grated
  • 1/2 brown onion, finely diced
  • 1 cup frozen peas
  • 1 cup grated tasty cheese
  • 100g sliced ham
  • 1/2 cup plain flour
  • 3 eggs, lightly beaten

Method

  • Step 1
    Preheat oven to 180C/a60 fan forced. Grease an 18cm x 27cm slice pan and line it with baking paper, extending paper over the two long sides.
  • Step 2
    Combine all ingredients except eggs in a bowl. Season well. Stir through eggs - mixture will be quite dry. Pour into prepared pan and press into an even layer.
  • Step 3
    Bake for 40 minutes or until set. Allow to cool slightly in pan, then slice into squares. Serve.

Notes:

  • These savoury squares are delicious hot or cold, so they make excellent lunch box food.
  • Try reheating the squares in a non-stick frypan - they become crispy and extra delicious!
  • Use leftover cooked rice, or a packet of pre-cooked microwave rice. Any type is fine.
