Use up some leftovers with a few fresh ingredients to make these budget friendly savoury squares. The rice makes them extra filling.
Ingredients
- 1 cup cooked rice
- 2 zucchini, grated
- 1/2 brown onion, finely diced
- 1 cup frozen peas
- 1 cup grated tasty cheese
- 100g sliced ham
- 1/2 cup plain flour
- 3 eggs, lightly beaten
Method

Step 1Preheat oven to 180C/a60 fan forced. Grease an 18cm x 27cm slice pan and line it with baking paper, extending paper over the two long sides.

Step 2Combine all ingredients except eggs in a bowl. Season well. Stir through eggs - mixture will be quite dry. Pour into prepared pan and press into an even layer.

Step 3Bake for 40 minutes or until set. Allow to cool slightly in pan, then slice into squares. Serve.

Notes:
- These savoury squares are delicious hot or cold, so they make excellent lunch box food.
- Try reheating the squares in a non-stick frypan - they become crispy and extra delicious!
- Use leftover cooked rice, or a packet of pre-cooked microwave rice. Any type is fine.
