The beautiful flavour of balsamic brings out the flavour of the sprouts.
Ingredients
Brussels Sprouts
- 1/2 kg Brussels sprouts
- 100 g pancetta sliced
- 1/4 cup extra virgin olive oil
- 1/4 cup caramelised balsamic vinegar
- 1 handful fresh basil leaves small torn
- 1 salt and pepper *to taste
Method

Step 1Preheat oven to 180C.

Step 2Cut Brussels Sprouts in half and add to roasting dish with pancetta, olive oil and salt and pepper. Place in oven and cook for 25 mins until the sprouts are tender and the pancetta is crunchy.

Step 3Remove from the oven and toss through caramelised balsamic vinegar and basil. Serve hot.
