Brussels Sprouts with Pancetta and Caramelised Balsamic Vinegar

Ingredients

Brussels Sprouts

  • 1/2 kg Brussels sprouts
  • 100 g pancetta sliced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup caramelised balsamic vinegar
  • 1 handful fresh basil leaves small torn
  • 1 salt and pepper *to taste

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Cut Brussels Sprouts in half and add to roasting dish with pancetta, olive oil and salt and pepper. Place in oven and cook for 25 mins until the sprouts are tender and the pancetta is crunchy.
  • Step 3
    Remove from the oven and toss through caramelised balsamic vinegar and basil. Serve hot.
