Broccoli, Cashew and Cranberry Salad

It doesn't sound like much, but it's very easy and very delicious. I found this recipe just before Christmas and thought I'd try it out on the family - even those that wouldn't normally eat raw broccoli loved it. I have made it since Christmas, and again, a big hit. - Alidee

Ingredients

  • 2 broccoli heads cut into pieces stems trimmed
  • 2 cups toasted cashews crushed *to taste
  • 1 cup dried cranberries
  • 1/2 red onion finely chopped
  • 1/2 cup mayonnaise
  • 1/4 cup hot water

Method

  • Step 1
    Place broccoli, onion, cranberries and cashews in a salad bowl.
  • Step 2
    Mix the mayonnaise with the hot water in a separate bowl and stir through the salad ingredients.
  • Step 3
    Cover and allow to rest until cold.
Recipe Notes

I wash the cashews, drain and salt them a little then roast them in the oven for about 20 minutes until golden/dark brown.
