Bacon, egg, cheese and mushroom muffins. These muffins are very filling, so great for breakfast, lunch or lunchboxes. So very quick and easy to make, and my guests are always asking me for the recipe. - mellybee77

Ingredients

  • 3 bacon rashers
  • 1 tbs oil
  • 400 g button mushrooms
  • 1 1/2 cup plain flour
  • 1 pinch seasoning *to taste
  • 1 cup cheese grated
  • 80 g butter melted
  • 2 egg whisked
  • 2/3 cup milk

Method

  • Step 1
    Fry the bacon over medium-high heat for 4 minutes.
  • Step 2
    Remove to a plate. Increase heat to high.
  • Step 3
    Add mushrooms to frying pan. Cook for 5 minutes or until tender. Set aside to cool.
  • Step 4
    Preheat oven to 200C. Grease a 12 hole muffin tray.
  • Step 5
    Place flour, baking powder, salt, pepper and cheese into a bowl.
  • Step 6
    Whisk butter, eggs and milk in a jug. Pour into dry ingredients. Stir gently until almost combined. Fold through the bacon and mushrooms.
  • Step 7
    Spoon mixture into prepared pan. Bake for 20 minutes or until cooked, when tested with a skewer.
  • Step 8
    Stand for 5 minutes in pan before turning out. Serve warm.

  • 1 12-hole muffin pan
