Bacon, egg, cheese and mushroom muffins. These muffins are very filling, so great for breakfast, lunch or lunchboxes. So very quick and easy to make, and my guests are always asking me for the recipe.
Ingredients
- 3 bacon rashers
- 1 tbs oil
- 400 g button mushrooms
- 1 1/2 cup plain flour
- 1 pinch seasoning *to taste
- 1 cup cheese grated
- 80 g butter melted
- 2 egg whisked
- 2/3 cup milk
Method

Step 1Fry the bacon over medium-high heat for 4 minutes.

Step 2Remove to a plate. Increase heat to high.

Step 3Add mushrooms to frying pan. Cook for 5 minutes or until tender. Set aside to cool.

Step 4Preheat oven to 200C. Grease a 12 hole muffin tray.

Step 5Place flour, baking powder, salt, pepper and cheese into a bowl.

Step 6Whisk butter, eggs and milk in a jug. Pour into dry ingredients. Stir gently until almost combined. Fold through the bacon and mushrooms.

Step 7Spoon mixture into prepared pan. Bake for 20 minutes or until cooked, when tested with a skewer.

Step 8Stand for 5 minutes in pan before turning out. Serve warm.
