Ingredients

  • 2 cups plain flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 3 eggs
  • 1/2 cup milk
  • 150g sour cream
  • 1/2 cup green olives
  • 4 slices smoked ham, diced
  • 3 tsp capers
  • 1 cup grated cheese

Method

  • Step 1
    Preheat oven to 180C. Grease a 22cm x 11cm loaf tin and line it with baking paper, leaving some overhanging the edges.
  • Step 2
    In a large bowl, whisk together flour, baking powder and salt. In a jug, whisk together eggs, milk and sour cream. Add to flour mixture and stir until just combined. Season well with pepper. Add olives, ham, capers and half the cheese, and stir to combine. Tip into prepared tin and smooth the top. Sprinkle over remaining cheese. Bake for 35-45 minutes until a skewer inserted into the centre comes out clean. Allow to cool slightly, then slice into thick slices and serve with butter.
Recipe Notes

You could add some chopped fresh herbs to the mix for an extra flavour burst.

This is best eaten straightaway but any leftover slices can be toasted.
