These lightly spiced biscuits have a yummy white chocolate glaze and Biscoff sprinkle - perfect with a cup of tea or hot chocolate. They would be lovely packaged up to gift at Christmas time.
Ingredients
- 250g butter, softened
- 2/3 cup brown sugar
- 2 cups plain flour
- 2 tsp cinnamon
- 1/4 tsp baking powder
- 1/4 tsp bicarb soda
- 2 Biscoff biscuits, crushed
For glaze:
- 100g white chocolate
- 1/4 cup milk
- 1 1/2 cups icing sugar, sifted
- 1 tbsp butter, softened

Step 1Preheat oven to 180C. Line 2 large oven trays with baking paper.

Step 2In a stand mixer or using hand-held beaters, cream butter and sugar until pale and smooth. Sift flour, cinnamon, baking powder and bicarb together and add to butter. Mix until it comes together as a dough.

Step 3Roll mixture into walnut-size balls and place on the trays with plenty of space between. Use the palm of your hand to flatten them to a thick disc approximately 5-6cm across. Bake for 12 minutes. Allow to cool completely.

Step 4Meanwhile, make glaze by melting chocolate with the milk in short bursts in the microwave. Whisk in icing sugar and butter until smooth.

Step 5Once cool, spread each biscuit with white chocolate glaze and sprinkle with crushed Biscoff.

These bickies store in an airtight container for several days.
