Prep this muesli on a Sunday and you can quickly eat and be out the door every weekday, knowing that you have the sustenance to see you through. Top it with your favourite fresh fruit such as plump in-season blueberries.

How to make bircher muesli: key tips

The key to bircher muesli is soaking the oats overnight in apple juice and milk. This gives them a chance to absorb the moisture from the liquid and become much more tender, resulting in maximum creaminess. In this particular recipe, some honey and sultanas are soaked with the oats, adding a subtle sweetness and helping the sultanas to plump up, making them super juicy.

You can refrigerate this oat mixture for several days, simply adding the fresh fruit and yoghurt when you’re ready to serve. 

Key ingredients in this bircher muesli recipe

Use regular (not quick-cooking) rolled oats for this recipe, which will soak up the liquid, giving you a lovely creamy texture.

Milk is used to soak these rolled oats, along with apple juice. Soaking in apple juice will give your breakfast the sweetness. The fruit, such as the dried fruit and grated apple, will also add sweetness, as will the touch of honey used.

Fresh fruit bestows this brekky with more fibre as well as all the usual nutrients it offers. This recipe contains grated apple and blueberries, but you can choose whatever fruit you like to cut up on top.

Ingredients

  • 1 1/2 cups Uncle Tobys rolled oats
  • 250 ml milk
  • 125 ml apple juice
  • 1 tbs honey
  • 1/3 cup sultanas
  • 2 tbs dried pineapple finely chopped
  • 1/2 cup natural yoghurt
  • 1/2 apple coarsely grated medium peeled
  • 8 tsp natural yoghurt *to serve
  • 1/2 cup fresh blueberries *to serve

Method

  • Step 1
    Combine oats, milk, juice, honey and sultanas in a bowl. Cover and refrigerate overnight.
  • Step 2
    Stir in pineapple, yoghurt and grated apple.
  • Step 3
    Divide bircher muesli among eight ⅓ cup individual dishes or alternatively place in a large glass bowl.
  • Step 4
    Add a teaspoon of extra yoghurt on top and scatter with a few blueberries.

What other ingredients can I add to this bircher muesli?

You can add all kinds of things lurking in your fridge or pantry. Add toasted coconut, chopped dried apricots, or whatever fruit is in season. Change up your toppings, depending on the time of year.

What’s the difference between bircher muesli and overnight oats?

Traditional bircher muesli is light on the oats and heavier on the fruit (like grated apple and dried fruit), while overnight oats are mostly oats mixed with all kinds of ingredients such as peanut butter, chia seeds, chocolate, nuts, poppyseeds, vanilla, banana, etc.

How long will bircher muesli keep for?

The basic bircher muesli mixture – minus the fresh fruit – will keep in an airtight container in the fridge for up to 5 days. It’s perfect for making on a Sunday and then having for breakfast all week. Keep in mind, though, the oats will continue to soften the longer they are left.
