Tuna patties made without mashed potato.
Ingredients
- 425 g canned tuna in springwater drained
- 125 g corn kernels drained
- 1 celery stick finely chopped
- 4 spring onions chopped
- 1 egg
- 1 cup dried breadcrumbs
- 1/4 cup sweet chilli sauce *to taste
- 1 tbs fresh lemon juice
- 1 pinch salt and pepper *to taste
- 2 tbs oil for frying
Method

Step 1Combine all ingredients, except oil, in a bowl.

Step 2Firmly roll mixture into balls or patties, and refrigerate for 1 hour.

Step 3Shallow fry until browned and heated through.
Recipe Notes
This mixture can be quite crumbly to handle, but I find if I roll the balls very firmly, they stay intact during the cooking process. Putting them in the fridge if time permits will help this also.
Adjust flavourings to taste.
These are nice served with avocado and salad.
