Ingredients

  • 1 1/2 kg potato
  • 7 egg boiled cut into pieces
  • 300 g frozen peas
  • 1 brown onion coarsely grated
  • 500 g salami coarsely grated
  • 5 carrot coarsely grated cooked
  • 500 g whole-egg mayonnaise
  • 350 g sweet and sour gherkin
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Method

  • Step 1
    Cook potatoes in their skin in boiling water. Cool then peel and cut into bite sized pieces. Add potatoes to a large bowl.
  • Step 2
    In a microwave safe bowl, cook the frozen peas in microwave for 4 minutes. Cool cooked peas under cold water.
  • Step 3
    Add all remaining ingredients to potatoes and mix together.Season with salt and pepper. Taste and see if anything need to be added. Serve at room temperature with chicken schnitzel and cold beer.
Recipe Notes

It's best to cook the potatoes the day before. If you have special cutter for potato chips, use that to cut potatoes, carrots and eggs.
