This is really the best fish finger recipe. My 17 month old loves them, and they are easy and much tastier than the store bought.
Ingredients
- 1 kg white fish fillet coarsely chopped
- 2 tbs fresh chives coarsely chopped
- 1 cup frozen mixed vegetables
- 2 eggs
- 1 1/2 cups fresh breadcrumbs
- 1 tbs olive oil
Method

Step 1Grease a 19 cm x 30 cm lamington pan.

Step 2Process fish and chives until smooth, then mix in the frozen vegetables.

Step 3Press the mixture evenly into pan, turn onto baking-paper lined tray, cut into 16 fish fingers.

Step 4Whisk eggs lightly in shallow dish, place breadcrumbs in another shallow dish.

Step 5Dip fish fingers into eggs and then breadcrumbs to coat.

Step 6Pan fry them in olive oil until brown. Drain on absorbent paper.

Recipe Notes
I prefer multigrain breadcrumb when available.
I wet the knife before cutting the fish mixture for ease of cutting. Cut the fingers into smaller bites for toddlers if required.
You can also freeze the fingers after coating in breadcrumbs.
Vegetables you can use include peas, carrots, corns.
