Ingredients

  • 1 1/2 cup plain flour
  • 1/4 cup custard powder
  • 125g butter, chilled, chopped
  • 1 1/2 tbs caster sugar
  • 1 egg yolks
  • 2 tbs water

Custard

  • 2 egg
  • 2 egg yolks
  • 75 g caster sugar
  • 1 tsp vanilla extract
  • 500 ml cream
  • 1 nutmeg grated

Method

  • Step 1
    Preheat oven to 190C.
  • Step 2
    Sift the flour and custard powder into a bowl.
  • Step 3
    Rub in butter with fingertips until it resembles breadcrumbs.
  • Step 4
    Stir in sugar.
  • Step 5
    Mix in yolk and water with a knife to form a soft dough.

    Cover with plastic wrap and refrigerate for 30 minutes.
  • Step 7
    Lightly grease a 20 cm pie plate.
  • Step 8
    Roll out pastry between 2 sheets of baking paper and line the pie plate. Trim the edge.
  • Step 9
    Line with crumpled baking paper, fill with beans or baking beads and bake for 10 minutes.
  • Step 10
    Remove paper and beads and bake another 5 minutes until the base is dry. Remove from oven and cool.
  • Step 11
    Reduce oven temperature to 160C.
  • Step 12
    Custard: Whisk the eggs, yolks, vanilla and sugar in a bowl. Add the cream and combine.
  • Step 13
    Pour into cooled pastry case and sprinkle with nutmeg.
  • Step 14
    Bake 50-55 minutes until set but not too firm.
Recipe Notes

Place the empty case in the oven and then pour in the filling to avoid spillage.
