We love this recipe and I make it often - try to stop at one piece.
Ingredients
- 1 1/2 cup plain flour
- 1/4 cup custard powder
- 125g butter, chilled, chopped
- 1 1/2 tbs caster sugar
- 1 egg yolks
- 2 tbs water
Custard
- 2 egg
- 2 egg yolks
- 75 g caster sugar
- 1 tsp vanilla extract
- 500 ml cream
- 1 nutmeg grated
Method

Step 1Preheat oven to 190C.

Step 2Sift the flour and custard powder into a bowl.

Step 3Rub in butter with fingertips until it resembles breadcrumbs.

Step 4Stir in sugar.

Step 5Mix in yolk and water with a knife to form a soft dough.

Step 6Cover with plastic wrap and refrigerate for 30 minutes.

Step 7Lightly grease a 20 cm pie plate.

Step 8Roll out pastry between 2 sheets of baking paper and line the pie plate. Trim the edge.

Step 9Line with crumpled baking paper, fill with beans or baking beads and bake for 10 minutes.

Step 10Remove paper and beads and bake another 5 minutes until the base is dry. Remove from oven and cool.

Step 11Reduce oven temperature to 160C.

Step 12Custard: Whisk the eggs, yolks, vanilla and sugar in a bowl. Add the cream and combine.

Step 13Pour into cooled pastry case and sprinkle with nutmeg.

Step 14Bake 50-55 minutes until set but not too firm.
Recipe Notes
Place the empty case in the oven and then pour in the filling to avoid spillage.
