Ingredients

  • 1 cup rolled oats
  • 1 cup plain flour
  • 1 cup caster sugar
  • 3/4 cup desiccated coconut
  • 125 g butter
  • 1 tbs maple syrup
  • 1 tsp bicarbonate of soda
  • 2 tbs boiling water
  • 1 tsp vanilla essence

Method

  • Step 1
    Preheat oven to 150C (130C fan-forced). Grease oven trays and line with baking paper.
  • Step 2
    Combine oats, sifted flour, sugar and coconut in large bowl.
  • Step 3
    Stir butter and maple syrup in small saucepan over low heat until butter is melted. Combine the soda and water, add to butter mixture.

  • Step 4
    Stir into dry ingredients while mixture is still warm. Add vanilla essence.
  • Step 5
    Place heaped teaspoons of the mixture about 4 cm apart on trays and flatten slightly.
  • Step 6
    Bake, uncovered, for about 20 minutes or until golden brown. Loosen biscuits while warm and cool on trays.
Recipe Notes

Biscuits may seem slightly soft when first coming out of the oven, but they will harden up as they are cooling.
