These beetroot patties are a great vegetarian alternative to the meat in a burger. They taste delicious and with the rich and earthy flavour and texture of the beetroot you won’t miss the beef!
Ingredients
- 1 pack Castello Traditional Fetta Cubes in Brine
- 4 large beetroots (600 g), roughly grated
- 2 onions roughly grated
- 3 eggs
- 2 tbsp psyllium husk powder or 100 - 150 g plain flour
- 1 handful fresh mint, chopped
- 1 tsp salt
- black pepper
- butter for frying
Method

Step 1Place the grated beetroot and onions in a bowl with the eggs and mix thoroughly. Add the psyllium husk (or flour) and mix again.

Step 2Add salt, pepper, fetta cheese and fresh mint and mix to combine.

Step 3Heat a frying pan on medium heat and add a large dollop of butter. Use your hands to shape the beetroot patties.

Step 4Fry the patties on each side for 5-10 min., depending on thickness, until golden and set.
