Ingredients

  • 1 pack Castello Traditional Fetta Cubes in Brine
  • 4 large beetroots (600 g), roughly grated
  • 2 onions roughly grated
  • 3 eggs
  • 2 tbsp psyllium husk powder or 100 - 150 g plain flour
  • 1 handful fresh mint, chopped
  • 1 tsp salt
  • black pepper
  • butter for frying

Method

  • Step 1
    Place the grated beetroot and onions in a bowl with the eggs and mix thoroughly. Add the psyllium husk (or flour) and mix again.
  • Step 2
    Add salt, pepper, fetta cheese and fresh mint and mix to combine.
  • Step 3
    Heat a frying pan on medium heat and add a large dollop of butter. Use your hands to shape the beetroot patties.
  • Step 4
    Fry the patties on each side for 5-10 min., depending on thickness, until golden and set.
