An unlikely combination of flavours which looks and tastes great.
Ingredients
- 425 g canned beetroot cut into wedges well drained
- 2 orange
- 300 g baby spinach
- 1 red onion sliced small
- 3 tbs olive oil
- 1 tbs orange juice
- 1 pinch balsamic vinegar
Method

Step 1Peel oranges, making sure all pith is removed, and cut into segments.

Step 2Put spinach leaves into a flat serving dish.

Step 3Arrange beetroot, orange segments and sliced onion over spinach.

Step 4Drizzle with dressing made with oil, juice and vinegar.
Recipe Notes
Salad can be made in advance, but add dressing just before serving.
