A very tender and delicious meal done in under one hour.
Ingredients
- 750 g slow cook gravy beef diced
- 1 brown onion large sliced
- 2 carrots chopped peeled
- 3 potatoes diced peeled
- 1 garlic clove crushed
- 400 g canned tomatoes
- 500ml beef stock (liquid)
- 2 bay leaves
- 2 tbs tomato paste
- 2 tbs Worcestershire sauce
- 2 tbs olive oil
- 1/4 cup plain flour *to season
- 1 pinch salt and pepper *to taste
- 1 splash pouring cream *optional
Method

Step 1Cut the beef and vegetables. Coat beef in seasoned flour (combine the flour with salt and pepper), then shake off the excess.

Step 2Add 1tbs of oil into the saucepan, then cook beef in batches until lightly browned. Remove from pan.

Step 3Add remaining oil, and cook onion and garlic until onion has softened.

Step 4Return the beef to the pot, add carrots, potatoes, canned tomatoes, bay leaves, stock and sauces.

Step 5Seal lid, cook in pressure cooker for 25 minutes.

Step 6Discard bay leaves, then season to taste. Serve with pouring cream.
