Beef Tomato Stew

Ingredients

  • 750 g slow cook gravy beef diced
  • 1 brown onion large sliced
  • 2 carrots chopped peeled
  • 3 potatoes diced peeled
  • 1 garlic clove crushed
  • 400 g canned tomatoes
  • 500ml beef stock (liquid)
  • 2 bay leaves
  • 2 tbs tomato paste
  • 2 tbs Worcestershire sauce
  • 2 tbs olive oil
  • 1/4 cup plain flour *to season
  • 1 pinch salt and pepper *to taste
  • 1 splash pouring cream *optional

Method

  • Step 1
    Cut the beef and vegetables. Coat beef in seasoned flour (combine the flour with salt and pepper), then shake off the excess.
  • Step 2
    Add 1tbs of oil into the saucepan, then cook beef in batches until lightly browned. Remove from pan.
  • Step 3
    Add remaining oil, and cook onion and garlic until onion has softened.

  • Step 4
    Return the beef to the pot, add carrots, potatoes, canned tomatoes, bay leaves, stock and sauces.
  • Step 5
    Seal lid, cook in pressure cooker for 25 minutes.
  • Step 6
    Discard bay leaves, then season to taste. Serve with pouring cream.

You can use a pressure cooker instead.
