This soup is easy to make and a great way to sneak in vegetables for the kids.

Ingredients

  • 1 kg beef bones
  • 1 onion chopped large
  • 2 carrots diced
  • 2 celery sticks chopped
  • 1/2 cup pearl barley
  • 3 garlic cloves crushed
  • 400 g canned diced tomatoes
  • 1 tbs Worcestershire sauce
  • 2 1/2 cups beef stock (liquid)
  • 1 cup water
  • 1 tsp dried mixed herbs
  • 1 tsp salt *to taste

Method

  • Step 1
    Combine all ingredients in pressure cooker and seal.

  • Step 2
    Bring to high pressure, adjust heat and cook at high pressure for 30 minutes.
  • Step 3
    Remove from heat and allow pressure to release naturally for 10-15 minutes.
  • Step 4
    Remove bones and bay leaf. Season to taste with salt.
  • Step 5
    Serve with warm bread or rolls.

  • 1 pressure cooker
Recipe Notes

You can also swap 1/2 cup of beef stock for bacon stock.

To make it slightly heartier, add 750g stewing beef and 2 large cubed potatoes.

After removing lid, return pot to heat and stir in a cornflour paste (3 tablespoons cornflour, 3 tablespoons cold water) gently to make a stew.
