This soup is easy to make and a great way to sneak in vegetables for the kids.
Ingredients
- 1 kg beef bones
- 1 onion chopped large
- 2 carrots diced
- 2 celery sticks chopped
- 1/2 cup pearl barley
- 3 garlic cloves crushed
- 400 g canned diced tomatoes
- 1 tbs Worcestershire sauce
- 2 1/2 cups beef stock (liquid)
- 1 cup water
- 1 tsp dried mixed herbs
- 1 tsp salt *to taste
Method

Step 1Combine all ingredients in pressure cooker and seal.

Step 2Bring to high pressure, adjust heat and cook at high pressure for 30 minutes.

Step 3Remove from heat and allow pressure to release naturally for 10-15 minutes.

Step 4Remove bones and bay leaf. Season to taste with salt.

Step 5Serve with warm bread or rolls.

Recipe Notes
You can also swap 1/2 cup of beef stock for bacon stock.
To make it slightly heartier, add 750g stewing beef and 2 large cubed potatoes.
After removing lid, return pot to heat and stir in a cornflour paste (3 tablespoons cornflour, 3 tablespoons cold water) gently to make a stew.
