BBQ Meatloaf with Parmesan

This meatloaf is a winner every time with my boys! The addition of the Parmesan cheese keeps it moist and using BBQ sauce instead of tomato sauce (as is called for in most other recipes) makes a delicious difference. - julie6111

Ingredients

  • 750 g beef mince
  • 1 slice bread broken into pieces
  • 1 cup stuffing mix
  • 1/2 cup parmesan cheese grated optional
  • 1 tsp paprika
  • 1 egg
  • 1 red onion finely chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 tbs barbecue sauce
  • 3/4 cup milk
  • 1 slice bread broken into pieces optional

Sauce

  • 3 tbs apple cider vinegar
  • 2 tbs brown sugar firmly packed *to taste
  • 4 tbs barbecue sauce

Method

  • Step 1
    Combine meatloaf ingredients in a large mixing bowl.
  • Step 2
    Spread into a large loaf tin, smooth top.
  • Step 3
    Combine sauce ingredients and pour over meatloaf.
  • Step 4
    Bake at 180C for approximately 1 hour 15 minutes, or until cooked.

  • 1 bowl
  • 1 loaf pan
Recipe Notes
I use Fountain brand BBQ sauce - smokey BBQ. The mixture should not be runny. Make sure you use a large loaf tin, a small one won't leave room for the sauce on top. Break or chop finely bread and use extra bread if needed and seasoned stuffing mix or breadcrumbs.
