This recipe is a dairy-free variation on a basic fondant recipe for covering cakes.
Ingredients
- 3 tbs lukewarm water
- 5 tsp gelatine powder
- 1/2 cup liquid glucose
- 6 cup icing sugar sifted
Method

Step 1Mix warm water and gelatin in a small bowl until dissolved.

Step 2Add the glucose and stir until dissolved. Leave to cool for a few minutes.

Step 3In a large bowl, sift confectioners sugar, then sift again to make sure there are no lumps.

Step 4Make an indention in the centre of the sifted sugar and pour in the gelatin mixture.

Step 5Stir with a wooden spoon until combined.

Step 6Dust work surface with confectioners sugar.

Step 7Turn fondant mixture out onto the work surface and work the powdered sugar in with hands.

Step 8Wrap fondant mixture in plastic wrap as air-tightly as possible and store in a sealed container while working with smaller pieces of it.

Step 9This will help keep it from forming a crust.

Step 10If a crust forms, sprinkle a little confectioners sugar over it and knead.
