No eggs necessary! Turn leftover fruit and vegetables into muffins quickly and easily with this basic muffin mix recipe. This makes the equivalent of four muffin packet mixes and they can be baked in a pie maker. Plus they're a fraction of the cost of store-bought muffins. - Serina Bird

Ingredients

Pre-mix (makes 4 quantities)

  • 1kg self-raising flour
  • 1 1/2 cups white sugar
  • 3 tbsp soy flour*
  • 1 cup milk powder

For every quantity, add

  • 3/4 cup of water
  • 2 tbsp butter or oil

Method

  • Step 1
    To prepare the pre-mix, combine all the dry ingredients into one large three litre container. Shape or stir to combine. Alternatively, combine in a bowl and then divide into four. Store until needed.
  • Step 2
    To bake, scoop 2 1/8 cups of the dry pre-mix into a bowl. Add ¾ cup of water and two tablespoons of oil or butter. Mix until combined, then add in fruit or other flavourings as desired.
  • Step 3
    Bake in cupcake cases in a pie maker for around 10 minutes. Alternatively, bake in an oven at 170C for 10-15 minutes.
Recipe Notes

Flavour variations

Black banana: Mash two ripe bananas, then mix them into the mixture.

Classic apple: Dice one medium or two small apples, and stew for three minutes in the microwave to soften (note: this works especially well with floury apples).

Apple cinnamon: Add one teaspoon of cinnamon, and one grated apple.

French apple: Finely slice one or two apples. Top each muffin with overlapping slices of apple. Sprinkle the apple with sugar and cinnamon.

Lemon poppy seed: Add two tablespoons of poppy seed plus the rind and juice from one lemon.

Pumpkin: Add one cup of cooked, mashed pumpkin, and ¼ of a teaspoon each of nutmeg and cinnamon.

Choc chip: Add one cup of chocolate chips.

Blueberry: Add one small punnet of blueberries (or one cup of frozen).

White chocolate and raspberry: Add 2/3 a cup of white chocolate chips, an 2/3 a cup of fresh or frozen raspberries.

Peanut butter: Add ½ a cup or to taste of peanut butter.

Chocolate: Add in two tablespoons of cocoa powder, and some additional water if necessary to mix.

Note: if you do not have soy flour, use an egg when baking each quantity instead and, if necessary, reduce the amount of water used.
