Ingredients

  • 1 cup self-raising flour
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2/3 cup caster sugar
  • 1/3 cup banana mashed
  • 60 g butter melted
  • 1 egg large
  • 1/4 cup milk

Passionfruit icing

  • 1 1/2 cup icing sugar sifted
  • 1 passionfruit pulp
  • 15 g butter
  • 1/3 tsp boiling water

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Sift flour, bicarbonate of soda, cinnamon and nutmeg into a large bowl and stir in sugar.
  • Step 3
    Make a well in the centre of dry ingredients, add mashed banana, butter, egg and milk and stir until well combined.
  • Step 4
    Spread mixture into 17 cm x 27 cm lined and greased slice tin.
  • Step 5
    Bake for approximately 25 minutes or until just firm in centre. Cool slice in pan.
  • Step 6
    To make the icing, sift icing sugar into a small bowl, stir in butter and passionfruit.
  • Step 7
    Add boiling water, if needed, to create spreading consistency.
  • Step 8
    Spread icing over slice, allow to set.
  • Step 9
    Cut into squares to serve.
