A moist, fruity cake.
Ingredients
- 125 g butter
- 3/4 cup brown sugar
- 2 tablespoons golden syrup
- 1 cup mashed banana
- 1 1/2 cups self-raising flour
- 2 teaspoons ground ginger
- 2 teaspoons mixed spice
- 1 egg
- 1 cup sultanas
- 2 tablespoons milk
Method

Step 1Melt butter, sugar, golden syrup and spices in a saucepan over low heat. Allow to cool slightly.

Step 2Stir in banana and egg using a whisk. Sift in flour.

Step 3Add milk and sultanas. Mix well.

Step 4Pour into greased and lined cake tin. Bake at 170C for approximately 1 hour.
Recipe Notes
Cake is cooked when it springs back when lightly touched in the centre. All ovens vary so it may need a longer or shorter cooking time.
