Ingredients

  • 125 g butter
  • 3/4 cup brown sugar
  • 2 tablespoons golden syrup
  • 1 cup mashed banana
  • 1 1/2 cups self-raising flour
  • 2 teaspoons ground ginger
  • 2 teaspoons mixed spice
  • 1 egg
  • 1 cup sultanas
  • 2 tablespoons milk

Method

  • Step 1
    Melt butter, sugar, golden syrup and spices in a saucepan over low heat. Allow to cool slightly.
  • Step 2
    Stir in banana and egg using a whisk. Sift in flour.
  • Step 3
    Add milk and sultanas. Mix well.
  • Step 4
    Pour into greased and lined cake tin. Bake at 170C for approximately 1 hour.
Recipe Notes

Cake is cooked when it springs back when lightly touched in the centre. All ovens vary so it may need a longer or shorter cooking time.
