A delicious easy to make banana cake with a crumble topping which makes it that bit extra special. The recipe can also be used to make muffins. - Streaky

Ingredients

  • 1/3 cup olive oil
  • 1 cup brown sugar
  • 2 egg
  • 3 banana mashed ripe
  • 1/2 tsp vanilla extract
  • 2 cup plain flour
  • 3 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 pinch salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup milk

Crumble Topping

  • 35 g butter
  • 3 tbs walnuts chopped
  • 3 tbs brown sugar
  • 3 tbs plain flour
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon

Method

  • Step 1
    Crumble: Mix butter into the dry ingredients until well combined. Put to one side.
  • Step 2
    Grease a 20 cm spring form tin and preheat oven to 180C.
  • Step 3
    Combine olive oil and sugar in a large bowl and beat in eggs one at a time.
  • Step 4
    Add bananas and vanilla extract.
  • Step 5
    Sift dry ingredients and add to the mixture in two batches, alternating with the milk. Spoon the mixture into the tin.
  • Step 6
    Sprinkle the crumble topping mix over the cake batter, pressing it in lightly before baking.
  • Step 7
    Bake cake for 45 minutes. Allow to cool before removing from the tin.
