Banana Brown Sugar Dumplings

This bake is very close to my heart. My parents (like all parents) were fighting a losing battle to get us kids to eat fruit and veg. I really dug my heels in when it came to greens, but I never had any objections to banana, not because I liked bananas in particular, but because it always came cut up in little pieces with a sprinkle of brown sugar on top. Admittedly, not the healthiest of things to do to a fruit, but it got us to eat it! Maybe mum should have tried that trick on my peas as well. So these are a little, okay, a lot further towards unhealthy than a fresh banana with a little sugar on top, but my god are they yummy! They’re soo good in fact that I've had to implement a new rule. No baking when hungry!! I ate way too much batter, and then way too many dumplings. I don't think I'll be needing dinner tonight! - dayna_hoskin

Ingredients

  • 2 1/2 cups brown sugar
  • 750 ml water
  • 60 g butter

Dumplings

  • 1 1/4 cups self-raising flour
  • 40 g butter cut into cubes
  • 1/3 cup caster sugar
  • 1/3 cup full cream milk
  • 2 bananas large
  • 1 egg

Method

  • Step 1
    In a medium mixing bowl, combine caster sugar and sifted flour.
  • Step 2
    Using your fingertips, rub 40g butter into your dry ingredients until thoroughly combined and mixture resembles fine breadcrumbs.
  • Step 3
    Combine egg and milk into a glass or small bowl and whisk together with a fork until thoroughly combined (there are no egg streaks through the milk).
  • Step 4
    Create a well in the centre of your mixing bowl, pour in your egg/milk mixture and mashed banana, and combine to form a soft batter. Set aside.
  • Step 5
    Place brown sugar, water and 60g butter in a large saucepan (at least 20cm diameter). Stir occasionally over a medium heat until the sugar has dissolved, and the butter is melted. Bring syrup to the boil and immediately lower to a simmer.
  • Step 6
    Using two dessert spoons, gently drop spoonfuls of batter into the simmering syrup. I would suggest a maximum of two dumplings at a time.
  • Step 7
    Leave dumplings to simmer for 10 minutes, then flip them over and cook for another 10 minutes.
  • Step 8
    Plate dumplings into a shallow bowl, spoon syrup over the top and serve hot.
Recipe Notes

These little babies don't reheat well, so I would suggest making them as needed.
