Ingredients

  • 2 cup self-raising flour
  • 1 tsp baking powder
  • 1 tbs ground cinnamon
  • 1 cup bran
  • 3/4 cup caster sugar
  • 2 egg lightly beaten
  • 3/4 cup milk
  • 60 g margarine melted
  • 2 banana mashed ripe

Method

  • Step 1
    Preheat oven to 210C. Lightly grease a 12-hole, ½ cup muffin tin.
  • Step 2
    Sift the flour, baking powder and cinnamon into a large bowl and stir in the oat bran and sugar. Make a well in the centre.
  • Step 3
    Mix together the eggs, milk, butter and mashed bananas and pour into the well all at once. Using a fork, stir until just mixed.
  • Step 4
    Spoon the mixture into the muffin tin. Bake for 15 minutes, until the muffins have risen and are golden brown.
  • Step 5
    Leave in tin 5 minutes, then transfer to a wire rack to cool.
Recipe Notes
Don't overbeat the mixture. It should still be lumpy, and it doesn't even matter if there is still some dryness in the mixture. The cooked muffins freeze well.
