A quick, easy recipe that uses ingredients on hand, and that results in muffins that are full of texture and taste.
Ingredients
- 2 cup self-raising flour
- 1 tsp baking powder
- 1 tbs ground cinnamon
- 1 cup bran
- 3/4 cup caster sugar
- 2 egg lightly beaten
- 3/4 cup milk
- 60 g margarine melted
- 2 banana mashed ripe
Method

Step 1Preheat oven to 210C. Lightly grease a 12-hole, ½ cup muffin tin.

Step 2Sift the flour, baking powder and cinnamon into a large bowl and stir in the oat bran and sugar. Make a well in the centre.

Step 3Mix together the eggs, milk, butter and mashed bananas and pour into the well all at once. Using a fork, stir until just mixed.

Step 4Spoon the mixture into the muffin tin. Bake for 15 minutes, until the muffins have risen and are golden brown.

Step 5Leave in tin 5 minutes, then transfer to a wire rack to cool.
Recipe Notes
Don't overbeat the mixture. It should still be lumpy, and it doesn't even matter if there is still some dryness in the mixture. The cooked muffins freeze well.
