Best ever loaf.
Ingredients
- 75 g dried apricots
- 75 g sultanas
- 1 lemon zested
- 100 g unsalted butter
- 125 g caster sugar
- 2 large egg
- 3 banana large mashed ripe
- 200 g self-raising flour
Method

Step 1Preheat oven to 160C.

Step 2Line a 13 cm x 23 cm x 7 cm loaf pan with greaseproof paper.

Step 3Cream butter and sugar in a mixing bowl until well-blended.

Step 4Beat in eggs, one at a time.

Step 5Chop apricots to same size as sultanas. Add fruit and lemon zest. Stir in bananas.

Step 6Sift the flour into the bowl. Carefully fold into the mixture with a metal spoon until well-combined.

Step 7Pour mixture into prepared tin and gently level the top with the back of a spoon.

Step 8Bake for approximately 50-60 minutes, or until a knife inserted into the centre comes out clean.

Step 9Leave in tin for 15 minutes, then turn out onto a wire rack to cool.
