Ingredients

  • 75 g dried apricots
  • 75 g sultanas
  • 1 lemon zested
  • 100 g unsalted butter
  • 125 g caster sugar
  • 2 large egg
  • 3 banana large mashed ripe
  • 200 g self-raising flour

Method

  • Step 1
    Preheat oven to 160C.
  • Step 2
    Line a 13 cm x 23 cm x 7 cm loaf pan with greaseproof paper.
  • Step 3
    Cream butter and sugar in a mixing bowl until well-blended.
  • Step 4
    Beat in eggs, one at a time.
  • Step 5
    Chop apricots to same size as sultanas. Add fruit and lemon zest. Stir in bananas.
  • Step 6
    Sift the flour into the bowl. Carefully fold into the mixture with a metal spoon until well-combined.
  • Step 7
    Pour mixture into prepared tin and gently level the top with the back of a spoon.
  • Step 8
    Bake for approximately 50-60 minutes, or until a knife inserted into the centre comes out clean.
  • Step 9
    Leave in tin for 15 minutes, then turn out onto a wire rack to cool.
