This is a huge, light fruit cake with minimal ingredients and fantastic for the kids lunch boxes.
Ingredients
- 4 cup self-raising flour
- 375 g mixed fruit
- 600 ml milk
- 1 cup sugar
- 1 egg
- 1 pinch salt
Method

Step 1Sift flour and salt into a basin.

Step 2Add sugar and fruit.

Step 3Stir in milk and lightly beaten egg and mix well.

Step 4Pour into a greased and lightly floured baking dish or deep round cake tin.

Step 5Bake in a moderate oven for 55 minutes or until cooked when tested.

Step 6Serve sliced and buttered.
Recipe Notes
I usually add a tablespoon of butter to have it keep longer. It can be frozen so I usually cut it in half - one half for now and the other frozen for later. You can also use sultanas, raisins or currants.
