This is a huge, light fruit cake with minimal ingredients and fantastic for the kids lunch boxes. - debrakay56

Ingredients

  • 4 cup self-raising flour
  • 375 g mixed fruit
  • 600 ml milk
  • 1 cup sugar
  • 1 egg
  • 1 pinch salt

Method

  • Step 1
    Sift flour and salt into a basin.
  • Step 2
    Add sugar and fruit.
  • Step 3
    Stir in milk and lightly beaten egg and mix well.
  • Step 4
    Pour into a greased and lightly floured baking dish or deep round cake tin.
  • Step 5
    Bake in a moderate oven for 55 minutes or until cooked when tested.
  • Step 6
    Serve sliced and buttered.
Recipe Notes
I usually add a tablespoon of butter to have it keep longer. It can be frozen so I usually cut it in half - one half for now and the other frozen for later. You can also use sultanas, raisins or currants.
