This trifle is so versatile it can be made all year round, it can be eaten warm in winter and cold in summer. Also it can be made with many different fruits, whatever you feel like, Peaches, Apricots, Pineapple, Berries, even Fresh Banana. It's a one dish complete delicious sweet. - froginslippers

Ingredients

  • 825 g canned peaches
  • 1 kg thick vanilla custard
  • 3 egg whites
  • 1/2 cup caster sugar

Method

  • Step 1
    Preheat oven to 150C degrees fan-forced.
  • Step 2
    Place the drained canned peaches in the bottom of an oven proof dish. Spread the thick vanilla custard on top of the peaches.
  • Step 3
    Whisk the egg whites until soft peaks form, slowly add the caster sugar a dessert spoon at a time. Keep whisking until it's thick and glossy. Spread the meringue on top of the custard.
  • Step 4
    Bake in a pre heated oven for 20 minutes or until meringue gets light brown peaks. Serve warm in winter or cold in summer.

Recipe Notes
Peaches can be replaced with any type of fruit....it's also delicious with fresh Banana. I like to use a pyrex baking dish. I use Pauls Double Thick French Vanilla Custard.
