Crispy baked sweet potato fries are a delicious and healthy side dish. Don't forget the creamy garlic and yoghurt raita – drizzle or dip your fries until your heart is content!
Ingredients
- 1kg sweet potato peeled cut into 1cm strips
- 4 garlic cloves large fresh
- 2 tbs coconut oil melted
- 1/2 cup Greek or natural yoghurt
- 1/2 tsp ground turmeric
- 1/4 tsp ground cumin
- 1/4 cup mint leaves fresh
- salt and pepper *to taste
Method

Step 1Preheat the oven to 200C. Light grease or line a baking tray. Peel the sweet potato and cut into strips approximately 1cm wide. Finely chop or mince 2 garlic cloves.

Step 2Lightly toss the sweet potato with the coconut oil and minced garlic. Place on the prepared baking tray and bake for 25-30 minutes or until tender, turning half way.

Step 3Place the yoghurt, garlic, mint, turmeric and cumin in a food processor and blend until well-combined.

Step 4Once the sweet potatoes are cooked, season with salt and pepper. Serve fries on a plate drizzled with the raita.
