Baked Sweet Potato Fries with Turmeric and Mint Raita

Ingredients

  • 1kg sweet potato peeled cut into 1cm strips
  • 4 garlic cloves large fresh
  • 2 tbs coconut oil melted
  • 1/2 cup Greek or natural yoghurt
  • 1/2 tsp ground turmeric
  • 1/4 tsp ground cumin
  • 1/4 cup mint leaves fresh
  • salt and pepper *to taste

Method

  • Step 1
    Preheat the oven to 200C. Light grease or line a baking tray. Peel the sweet potato and cut into strips approximately 1cm wide. Finely chop or mince 2 garlic cloves.

    Lightly toss the sweet potato with the coconut oil and minced garlic. Place on the prepared baking tray and bake for 25-30 minutes or until tender, turning half way.
  • Step 3
    Place the yoghurt, garlic, mint, turmeric and cumin in a food processor and blend until well-combined.
  • Step 4
    Once the sweet potatoes are cooked, season with salt and pepper. Serve fries on a plate drizzled with the raita.
