Ingredients

  • 500 g lean beef mince
  • 1 cup evaporated milk
  • 3 tbs plain flour
  • 1 egg lightly beaten
  • 2 tbs parsley chopped
  • 1 garlic clove crushed
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 750 g potato peeled sliced
  • 2 bacon rashers cut into pieces rindless
  • 4 tomatoes halved small
  • 2 tbs margarine melted to coat
  • 1 pinch parsley chopped *to decorate

Method

  • Step 1
    Combine mince and ⅓ of the evaporated milk. Add the next seven ingredients and mix well. Shape mixture into 8 oval rolls.
  • Step 2
    Arrange potatoes in a greased, shallow baking dish, and sprinkle lightly with salt and pepper. Pour in remaining evaporated milk.
  • Step 3
    Place meat rolls down the centre of the dish. Place a piece of bacon over each roll.
  • Step 4
    Bake at 200C on the middle shelf of the oven for 30 minutes.
  • Step 5
    Brush tomatoes with a little margarine and place in the dish with the meat rolls.
  • Step 6
    Season lightly and bake for a further 10 minutes until the potatoes are tender.
  • Step 7
    Sprinkle with extra parsley.
