Whip up a batch of these baked filo appetisers this festive season for when guests pop over for drinks. They’re crispy on the outside and filled with oozy melted feta.
Ingredients
- 200g Greek-style feta
- 1 egg
- 2 tsp herbs, finely chopped
- 3 sheets filo pastry
- 80g butter, melted
- 2 tbsp sesame seeds
Method
-
Step 1Preheat oven to 200C. Line an oven tray with baking paper. Cut feta into 16 equal cubes.
-
Step 2In a small bowl, whisk egg. Stir through herbs and plenty of cracked pepper. Add feta cubes and toss to coat.
-
Step 3Lay the filo sheets in a stack and cut in half down the length, then across into three so you have 18 rectangles. Take one rectangle and brush with melted butter. Place a piece of feta at one end. Roll up and wrap in the filo to create a tidy parcel. Brush the outside with butter and sprinkle with sesame seeds. Place on prepared baking tray.
-
Step 4Repeat with remaining ingredient until you have 16 parcels. Bake for 10-12 minutes until golden and crispy. Serve on a platter with toothpicks.
Recipe Notes
Don’t add any salt to the egg mix - feta is salty enough.
These would be delicious served with a sweet dipping sauce - perhaps a festive cherry or plum sauce.
By all means double or triple the recipe if you need to feed a crowd.
You can pre-wrap the appetisers and refrigerate them in an airtight container until you are ready to take them.
