Baked Choc Chip Mini Doughnuts with Peanut Butter Glaze

Ingredients

  • 50 g unsalted butter
  • 100 ml buttermilk
  • 1 egg
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • 60 g dark chocolate finely chopped
  • 1/3 cup caster sugar
  • 1/4 tsp salt
  • 1 cup plain flour
  • 4 spray oil spray

For the peanut butter glaze

  • 1 cup icing sugar
  • 2 tbs smooth peanut butter
  • 4 tbs milk

Method

  • Step 1
    Preheat oven to 170C. Grease donut pan with oil spray.
  • Step 2
    In a large microwave proof mixing bowl, add the butter and microwave in 30 second bursts until melted.
  • Step 3
    Remove the butter from microwave and add the caster sugar. Stir with a wooden spoon or spatula.
  • Step 4
    Add the plain flour, baking powder and salt to the melted butter and sugar and combine.
  • Step 5
    In a measuring cup combine the buttermilk, egg and vanilla essence. Fold through donut mixture. Add the chopped chocolate and mix gently until combined.
  • Step 6
    Pour batter into a piping bag and pipe into each donut mould until half full. Don't overfill or they will rise and you will lose your donut hole!!
  • Step 7
    Bake in preheated oven for 8 mins or until firm to touch.
  • Step 8
    To prepare the glaze: In a mixing bowl combine the icing sugar, peanut butter and milk and whisk with a fork until smooth. If the mixture is still a little thick add more milk until you get the right consistency.
  • Step 9
    Remove donuts from oven and turn onto a wire rack to cool slightly. Dip the donuts into the glaze and place back on the wire rack to allow glaze to set.

  • 12 hole mini donut pan
  • 1cm nozzle piping bag
  • 1 microwave safe bowl
  • 1 microwave
Recipe Notes

Make sure the chocolate is chopped small enough to pass through the 1cm nozzle easily.

Dip the bottom sides of the donuts as they look much neater, you can make extra glaze if you wish to double dip all the donuts for a thicker glaze.
