This simple Christmas loaf uses fruit soaked in Baileys and is topped with a thick Baileys icing.
Ingredients
- 300g mixed fruit
- 250ml Baileys Irish cream
- 3/4 cup brown sugar
- 1/2 cup thickened cream
- 2 eggs, lightly beaten
- 1 1/2 cups self raising flour, sifted
- 1 tsp cinnamon
- 1 tsp mixed spice
- 250g salted butter, at room temperature
- 500g soft icing sugar
- 3 tbsp Baileys Irish cream, extra

Step 1Soak fruit in baileys in a large bowl for 2-4 hours.

Step 2Preheat an oven to 190C/170C fan forced. Grease a 20cm x 10cm (base measurement) loaf pan and line with baking paper.

Step 3To the soaked, add the sugar, cream, eggs, flour and spices and mix to combine. Pour into the prepared pan and bake for 50-55 minutes, dropping the temperature to 160C fan forced after 40 minutes of cooking, or until a skewer inserted into the centre comes out clean. Leave to cool in the pan for 5 minutes before transferring to a wire rack to cool.

Step 4For the buttercream, beat butter in the bowl of an electric mixer until pale. Sift icing sugar into the butter. Add baileys and beat until smooth. Adding more baileys if required until you have the desired consistency. Spread over cooled cake.

Step 5Serve cut into thick slices.

For the fruit i used the following:
- 50g sultanas
- 50g currants
- 50g raisins
- 50g dried apple
- 30g cranberries
- 30g glace cherries
- 40g dried apricots
