Ingredients

  • 125g butter
  • 1 cup sugar
  • 2 eggs
  • 1 cup Irish cream-based liqueur
  • 2 cups plain flour
  • 4 tsp baking powder
  • 1 tbs icing sugar to decorate

Method

  • Step 1
    Melt butter in a saucepan large enough to mix all the ingredients.

    Remove from heat and add sugar and eggs. Mix to combine, then stir in Baileys.
  • Step 3
    Sift flour and baking powder into mixture and fold in.
  • Step 4
    Line the bottom of a 20cm cake pan with baking paper and then pour in the mixture.
  • Step 5
    Bake at 180C for 45 minutes, or until cake springs back when lightly touched.
  • Step 6
    Cool in the pan for 5 minutes before turning out onto a cooling rack.
  • Step 7
    Sift a small amount of icing sugar on top and serve warm or cold.
Recipe Notes

You can serve this with coffee cream (1 tablespoon each of instant coffee and hot water, and 2 tablespoons of coffee cream liqueur folded into 300ml whipped cream), but I find it's quite rich enough without it.
