An indulgent cake that you'll really enjoy.
Ingredients
- 125g butter
- 1 cup sugar
- 2 eggs
- 1 cup Irish cream-based liqueur
- 2 cups plain flour
- 4 tsp baking powder
- 1 tbs icing sugar to decorate
Method

Step 1Melt butter in a saucepan large enough to mix all the ingredients.

Step 2Remove from heat and add sugar and eggs. Mix to combine, then stir in Baileys.

Step 3Sift flour and baking powder into mixture and fold in.

Step 4Line the bottom of a 20cm cake pan with baking paper and then pour in the mixture.

Step 5Bake at 180C for 45 minutes, or until cake springs back when lightly touched.

Step 6Cool in the pan for 5 minutes before turning out onto a cooling rack.

Step 7Sift a small amount of icing sugar on top and serve warm or cold.
Recipe Notes
You can serve this with coffee cream (1 tablespoon each of instant coffee and hot water, and 2 tablespoons of coffee cream liqueur folded into 300ml whipped cream), but I find it's quite rich enough without it.
