Healthy, quick and budget friendly meal to meet all hunger needs.
Ingredients
- 6 rashers shortcut bacon, roughly chopped
- 1 red capsicum, diced
- 1 zucchini, diced
- 1 red Birdseye chilli, diced
- 1 brown onion, diced
- 1 clove garlic, diced
- 2 x 400 g cans cherry tomatoes
- Angel hair pasta
- Basil leaves
- Parmesan, to serve
- 1 tablespoon olive oil
- Salt and pepper
Method

Step 1Heat oil in pan, combine garlic, onion and chilli, stir for 2 minutes.

Step 2Add bacon to pan and cook for another minute, then add zucchini and capsicum and cook for another 2 minutes.

Step 3Add canned tomatoes and basil, season with salt and pepper and simmer for another 15 minutes.

Step 4Bring pasta to boil just before serving.

Step 5Fill bowl with pasta, top with tomato sauce, sprinkle with Parmesan and garnish with basil.
Recipe Notes
You can cook tomato and bacon mix for longer, it intensifies the flavour.
