Ingredients

  • 6 rashers shortcut bacon, roughly chopped
  • 1 red capsicum, diced
  • 1 zucchini, diced
  • 1 red Birdseye chilli, diced
  • 1 brown onion, diced
  • 1 clove garlic, diced
  • 2 x 400 g cans cherry tomatoes
  • Angel hair pasta
  • Basil leaves
  • Parmesan, to serve
  • 1 tablespoon olive oil
  • Salt and pepper

Method

  • Step 1
    Heat oil in pan, combine garlic, onion and chilli, stir for 2 minutes.
  • Step 2
    Add bacon to pan and cook for another minute, then add zucchini and capsicum and cook for another 2 minutes.
  • Step 3
    Add canned tomatoes and basil, season with salt and pepper and simmer for another 15 minutes.
  • Step 4
    Bring pasta to boil just before serving.
  • Step 5
    Fill bowl with pasta, top with tomato sauce, sprinkle with Parmesan and garnish with basil.
Recipe Notes
You can cook tomato and bacon mix for longer, it intensifies the flavour.
