An easy brunch, no-fuss lunch, or family-friendly dinner - this bacon and mushroom quiche is a delicious and versatile meal. We like it served with salad leaves and shoestring fries.
Ingredients
- 2 tbs olive oil
- 250g Swiss Brown or cup mushrooms sliced
- 1 brown onion finely chopped
- 150g rindless bacon chopped
- 2 sheets frozen shortcrust pastry thawed
- 3/4 cup grated tasty cheese
- 3 eggs
- 1/2 cup thickened cream
- 1/2 cup full cream milk
- 3 tsp cornflour
- 2 tsp Dijon mustard
- rocket leaves and shoestring fries *to serve

Step 1Heat a frying pan over high heat. Add half the olive oil and half the mushrooms to the pan and shake the pan often for 2 minutes. Remove to a plate. Repeat with remaining mushrooms. Cool.

Step 2Add the onion and bacon to the pan, cook, stirring often for 4 minutes until bacon is golden. Remove from heat and place on a plate to cool.

Step 3Place a large tray into the oven. Preheat tray and oven to 220C. Cut a 22cm round from 1 sheet pastry, and 3 x 5cm wide strips from the other sheet. Place strips around the edge of ungreased, 22cm base spring-form pan. Place the round into the base and press edges to seal. Refrigerate for 15 minutes.

Step 4Place a sheet of baking paper over the pastry and half fill with dried beans, rice or baking weights. Place the pan onto the hot tray and bake for 15 minutes, or until edges are just starting to turn golden. Remove the paper and beans and bake for an additional 5-7 minutes until pastry is golden all over. Remove the pastry and pan from oven. Do not remove the tray.

Step 5Spread the bacon mixture, mushrooms and cheese evenly over the pastry case. Whisk eggs, cream, milk, cornflour and mustard together in a large bowl and spoon over the filling. Season generously with freshly ground black pepper and place onto the tray in the oven to bake for 30-35 minutes until golden and set.

Recipe Notes
You can replace the onion with ¼ cup store-bought caramelised onion jam
For a meatless option, increase the mushrooms to 350g and replace the bacon with 2 cups of rocket. Sauté for 1 minute with the onion.
