Ingredients

  • 500 g penne
  • 8 bacon rashers chopped trimmed
  • 1 onion diced
  • 1 tsp crushed garlic
  • 2 tbs tomato paste
  • 1 pinch pepper *to taste
  • 1/4 tsp curry powder *to taste
  • 1 tbs olive oil

Method

  • Step 1
    Cook pasta according to packet instructions.
  • Step 2
    Lightly fry onion and garlic in the olive oil until onion has some colour to it.
  • Step 3
    Stir in bacon and heat through.
  • Step 4
    Add pepper and the curry powder and mix thoroughly.
  • Step 5
    Add the tomato paste and mix thoroughly. Add more olive oil if needed.
  • Step 6
    Heat over low heat, stirring occasionally.
  • Step 7
    Drain pasta and mix sauce through.
  • Step 8
    Serve with Parmesan, if desired.
Recipe Notes
I use Clive of India curry powder.
