Macaroni with bacon in a tomato base sauce.
Ingredients
- 500 g penne
- 8 bacon rashers chopped trimmed
- 1 onion diced
- 1 tsp crushed garlic
- 2 tbs tomato paste
- 1 pinch pepper *to taste
- 1/4 tsp curry powder *to taste
- 1 tbs olive oil
Method

Step 1Cook pasta according to packet instructions.

Step 2Lightly fry onion and garlic in the olive oil until onion has some colour to it.

Step 3Stir in bacon and heat through.

Step 4Add pepper and the curry powder and mix thoroughly.

Step 5Add the tomato paste and mix thoroughly. Add more olive oil if needed.

Step 6Heat over low heat, stirring occasionally.

Step 7Drain pasta and mix sauce through.

Step 8Serve with Parmesan, if desired.
