Where would we be without the humble rissole? Served with a salad and sauce or mash and veg, they make mealtimes a breeze and the kids love ’em! These ones have a flavour boost, thanks to tasty cheese and bacon, and could be disappearing at your dining table tonight.

How to make bacon and cheese rissoles: key tips

Rissoles are the easiest, tastiest mince meal to make. You simply mix all the ingredients in a bowl and then roll handfuls of the mixture into patties. The patties then go into the fridge to firm up a little, so they won’t break apart in the frying pan. 

The rissoles are fried in a frying pan until golden on each side before they’re baked in the oven until cooked through. This ensures that your rissoles have that lovely charred exterior, but are lovely and moist in the middle. It also means that the rissoles will hold together and the bits of cheese will stay inside and not melt out into the frying pan as you turn them.

Beef mince is the main ingredient of these rissoles. Opt for lean mince to cut down on the fat, if greasy rissoles aren’t your thing.

Bacon and cheese are the wow factor in these rissoles, offering a savoury hit and tiny (super delicious) pockets of melted cheese on the inside and grilled cheese on the outside. 

Barbecue sauce acts like a binding agent, helping to hold the patties together, while giving the rissoles a delightful tang. You could use tomato sauce instead, if you prefer.

Ingredients

  • 500 g beef mince
  • 200 g tasty cheese grated
  • 200 g bacon rashers diced
  • 1 cup barbecue sauce
  • 2 tbs garlic crushed
  • 1 onion diced
  • 1 cup dried breadcrumbs
  • 1 bunch fresh curly parsley finely chopped
  • 1/2 tsp sea salt
  • 1/2 tsp peppercorns

Method

  • Step 1
    Preheat oven to 260C.
  • Step 2
    Mix all ingredients in a large bowl until well-combined.

    Roll handfuls of mixture into patties and place in fridge for ½ hour.
  • Step 4
    Spray a frying pan with oil and brown the rissoles. Place on baking tray.
  • Step 5
    Bake rissoles for 20 minutes or until cooked through.

Can I use different herbs in these rissoles?

You can use whatever herbs you like in these rissoles. Swap the curly parsley for continental flat-leaf parsley, or try a mixture of any herbs such as coriander, thyme, chilli, rosemary and parsley.

How do I store these bacon and cheese rissoles?

You can make these rissoles ahead of time and store them in an airtight container in the fridge (for up to 3 days) or the freezer (for up to 2 months) uncooked. Leftover cooked rissoles can be stored in an airtight container in the fridge for up to 3 days. They’re really great on bread rolls with a drizzle of your favourite sauce!
