Ingredients

  • 2 bunch asparagus fresh
  • 1 cup cream
  • 2 tbs lemon juice
  • 1 tbs plain flour
  • 1 tbs butter
  • 1/2 tsp vegetable stock powder
  • 1 pinch dried tarragon

Method

  • Step 1
    In a medium saucepan, melt butter over medium heat, stir in flour and mix together.
  • Step 2
    Gradually add cream, whisking to avoid lumps. Stir until thickened.
  • Step 3
    Add lemon juice, stock powder and herbs, stir well.
  • Step 4
    Remove sauce from heat and set aside.
  • Step 5
    Trim thick ends of asparagus and place in a microwave dish with a little water.
  • Step 6
    Microwave on High for approximately 4 minutes or until firm but tender. Drain.
  • Step 7
    Remove asparagus to a warm plate and pour over warm lemon sauce.
Recipe Notes
Dill can substitute tarragon.
