Fresh asparagus in a creamy lemon sauce.
Ingredients
- 2 bunch asparagus fresh
- 1 cup cream
- 2 tbs lemon juice
- 1 tbs plain flour
- 1 tbs butter
- 1/2 tsp vegetable stock powder
- 1 pinch dried tarragon
Method

Step 1In a medium saucepan, melt butter over medium heat, stir in flour and mix together.

Step 2Gradually add cream, whisking to avoid lumps. Stir until thickened.

Step 3Add lemon juice, stock powder and herbs, stir well.

Step 4Remove sauce from heat and set aside.

Step 5Trim thick ends of asparagus and place in a microwave dish with a little water.

Step 6Microwave on High for approximately 4 minutes or until firm but tender. Drain.

Step 7Remove asparagus to a warm plate and pour over warm lemon sauce.
