I just made these this afternoon and they were yummy warm.
Ingredients
- 1/2 cup dried apricots chopped
- 1/2 cup water
- 1/2 cup apricot jam
- 100 g butter
- 1/2 cup white sugar
- 1 egg
- 1/2 cup milk
- 2 cup self-raising flour
- 2 tbs raw sugar
Method

Step 1Microwave apricots, water and jam in large glass jug for 5 minutes.

Step 2Stir in butter until melted and add sugar and milk.

Step 3Add flour and beaten egg. Stir until combined.

Step 4Spoon into 12 deep, well greased muffin tins.

Step 5Sprinkle tops with raw sugar.

Step 6Bake 180 C for 15-20 minutes.
