Ingredients

  • 1/2 cup dried apricots chopped
  • 1/2 cup water
  • 1/2 cup apricot jam
  • 100 g butter
  • 1/2 cup white sugar
  • 1 egg
  • 1/2 cup milk
  • 2 cup self-raising flour
  • 2 tbs raw sugar

Method

  • Step 1
    Microwave apricots, water and jam in large glass jug for 5 minutes.
  • Step 2
    Stir in butter until melted and add sugar and milk.
  • Step 3
    Add flour and beaten egg. Stir until combined.
  • Step 4
    Spoon into 12 deep, well greased muffin tins.
  • Step 5
    Sprinkle tops with raw sugar.
  • Step 6
    Bake 180 C for 15-20 minutes.

Equipment

  • 1 12-hole muffin pan
