Apricot and Ginger-Glazed Ham

This is a simple glazed ham. It is very easy but does require a close eye for the final 30 minutes of cooking. - lancelink

Ingredients

  • 3 1/2 kg smoked leg ham (deli)
  • 30 whole cloves

Glaze

  • 670 g apricot jam
  • 2 tbs ginger crushed
  • 1 tbs wholegrain mustard
  • 1 tbs dijon mustard
  • 1 cup sweet sherry

Method

  • Step 1
    Glaze: Place all ingredients in a bowl and mix thoroughly.
  • Step 2
    Preheat oven to 160C.
  • Step 3
    Wrap the ham in 2 layers of aluminium foil.
  • Step 4
    Bake for 2 hours.
  • Step 5
    Allow to rest for 30-60 minutes.
  • Step 6
    Remove skin gently. Lightly score the fat with a diagonal diamond pattern.
  • Step 7
    Firmly stud the diamonds with cloves.
  • Step 8
    Spoon over the glaze evenly.
  • Step 9
    Increase oven temperature to 200C.
  • Step 10
    Cook for an additional 20-30 minutes until the glaze is a dark golden colour.
Recipe Notes

Rotate every 30 minutes if your oven heats unevenly. Try putting half a cup of dry ginger ale into the foil-wrapped ham for extra moisture.
