This is a simple glazed ham. It is very easy but does require a close eye for the final 30 minutes of cooking.
Ingredients
- 3 1/2 kg smoked leg ham (deli)
- 30 whole cloves
Glaze
- 670 g apricot jam
- 2 tbs ginger crushed
- 1 tbs wholegrain mustard
- 1 tbs dijon mustard
- 1 cup sweet sherry
Method

Step 1Glaze: Place all ingredients in a bowl and mix thoroughly.

Step 2Preheat oven to 160C.

Step 3Wrap the ham in 2 layers of aluminium foil.

Step 4Bake for 2 hours.

Step 5Allow to rest for 30-60 minutes.

Step 6Remove skin gently. Lightly score the fat with a diagonal diamond pattern.

Step 7Firmly stud the diamonds with cloves.

Step 8Spoon over the glaze evenly.

Step 9Increase oven temperature to 200C.

Step 10Cook for an additional 20-30 minutes until the glaze is a dark golden colour.
Recipe Notes
Rotate every 30 minutes if your oven heats unevenly. Try putting half a cup of dry ginger ale into the foil-wrapped ham for extra moisture.
