Ingredients

  • 2 cup self-raising flour
  • 1/2 cup milk
  • 1 cup raw sugar
  • 125 g margarine
  • 1 cup desiccated coconut
  • 200 g dried apricots chopped

Method

  • Step 1
    Soak apricots in boiling water for 15 minutes, then strain.
  • Step 2
    Melt margarine, then add fruit, sugar, coconut, milk, and flour, stirring well after each addition.

    Sprinkle with extra sugar before baking.
  • Step 4
    Bake at 180C in a paper-lined, 25 cm x 30 cm lamington pan for 45 minutes.

  • 1 lamington pan
Recipe Notes

Use extra width of baking paper as handles to lift the slice. 200 g packets of chopped dried apricots are available in the supermarket.
