My husband describes this as "too nice."
Ingredients
- 2 cup self-raising flour
- 1/2 cup milk
- 1 cup raw sugar
- 125 g margarine
- 1 cup desiccated coconut
- 200 g dried apricots chopped
Method

Step 1Soak apricots in boiling water for 15 minutes, then strain.

Step 2Melt margarine, then add fruit, sugar, coconut, milk, and flour, stirring well after each addition.

Step 3Sprinkle with extra sugar before baking.

Step 4Bake at 180C in a paper-lined, 25 cm x 30 cm lamington pan for 45 minutes.

Recipe Notes
Use extra width of baking paper as handles to lift the slice. 200 g packets of chopped dried apricots are available in the supermarket.
