A light teacake that can be made when unexpected guests arrive or any time at all.
Ingredients
- 60g butter
- 1/2 cup sugar
- 1 egg
- 1 cup self-raising flour
- 1 pinch salt
- 1/2 cup milk
- 1 apple cored peeled thinly sliced *to decorate
- 1 tsp sugar *to decorate
- 1/2 tsp ground nutmeg *to decorate
Method

Step 1Cream butter and sugar and then add egg, beating well.

Step 2Add flour and salt alternating with milk and mix until light and fluffy.

Step 3Pour mixture into a greased and lined cake tin.

Step 4Place thickly sliced apple decoratively on top of cake and sprinkle with the extra sugar and some nutmeg.

Step 5Bake at 180C for 30-45 minutes.

Step 6Remove from tin when cooked and cool on tray.
