Apple Strudel is an Austrian speciality, not only served as a dessert! My mum and granny used to make an apple strudel for lunch served hot, with some icing sugar. Apple strudel also can be served as a cold dessert with some custard or ice cream. - Ange's Kitchen

Ingredients

  • 1 sheet puff pastry
  • 5 apple cubed large
  • 3/4 cup raisins
  • 1/2 cup fresh lemon juice
  • 1 tsp vanilla sugar
  • 3 tsp raw sugar
  • 3/4 tsp Dutch cinnamon
  • 2 tbs fresh breadcrumbs
  • 3 tbs margarine
  • 1/4 cup icing sugar *to serve

Method

  • Step 1
    Preheat oven to 170C degrees.
  • Step 2
    Defrost the puff pastry and prepare the apples by removing the skin and dicing into small cubes.
  • Step 3
    Mix apples with the lemon juice, vanilla sugar, raw sugar, raisins and cinnamon. Mix well and set aside.
  • Step 4
    Sprinkle some flour over a tea towel an lay sheet of defrosted puff pastry. Start to roll the pastry as thin as it gets. Spread with the melted margarine and sprinkle with the bread crumbs.

  • Step 5
    Top with the apple mix. Spread evenly.
  • Step 6
    Use the towel to roll the strudel tightly. Close the ends and spread with melted margarine.
  • Step 7
    Serve hot with some icing sugar on top.
  • Step 8
    Bake in preheated oven for 30 minutes. Turn down the heat to 150C without opening the oven door and give it another 10 to 15 minutes.

Recipe Notes

I recommend using Boscop apples, however if you can't find them you can try Pink Lady apples. I use Nuttelex Sunflower margarine.
