Apple Strudel is an Austrian speciality, not only served as a dessert! My mum and granny used to make an apple strudel for lunch served hot, with some icing sugar. Apple strudel also can be served as a cold dessert with some custard or ice cream.
Ingredients
- 1 sheet puff pastry
- 5 apple cubed large
- 3/4 cup raisins
- 1/2 cup fresh lemon juice
- 1 tsp vanilla sugar
- 3 tsp raw sugar
- 3/4 tsp Dutch cinnamon
- 2 tbs fresh breadcrumbs
- 3 tbs margarine
- 1/4 cup icing sugar *to serve
Method

Step 1Preheat oven to 170C degrees.

Step 2Defrost the puff pastry and prepare the apples by removing the skin and dicing into small cubes.

Step 3Mix apples with the lemon juice, vanilla sugar, raw sugar, raisins and cinnamon. Mix well and set aside.

Step 4Sprinkle some flour over a tea towel an lay sheet of defrosted puff pastry. Start to roll the pastry as thin as it gets. Spread with the melted margarine and sprinkle with the bread crumbs.

Step 5Top with the apple mix. Spread evenly.

Step 6Use the towel to roll the strudel tightly. Close the ends and spread with melted margarine.

Step 7Serve hot with some icing sugar on top.

Step 8Bake in preheated oven for 30 minutes. Turn down the heat to 150C without opening the oven door and give it another 10 to 15 minutes.

Recipe Notes
I recommend using Boscop apples, however if you can't find them you can try Pink Lady apples. I use Nuttelex Sunflower margarine.
