This old-fashioned apple, raisin and caramel pudding is like a comforting, warm hug. The cakey, raisin-studded pudding goes beautifully with the tart apples and luscious caramel sauce.
Ingredients
- 1 cup raisins
- 3/4 tsp bicarb soda
- 1 1/2 cup cups plain flour
- 1/2 cup brown sugar
- 100g butter, melted
- 1/2 cup milk
- 1 egg
- 1 tbsp golden syrup
- 3 apples
- 2 tbsp brown sugar, extra
For caramel sauce:
- 125g butter
- 300ml cream
- 1 cup brown sugar
Method

Step 1Preheat oven to 180C. Grease a large round baking dish with butter.

Step 2Place raisins and bicarb soda in a small bowl. Pour over 1 cup boiling water and stir to combine. Set aside for 15 minutes.

Step 3To make sauce, combine ingredients in a small saucepan over gentle heat and simmer for 2 minutes. Pour half of the sauce into the base of the prepared dish.

Step 4Whisk together flour and brown sugar in a medium bowl. In a separate bowl, combine melted butter, milk, egg and golden syrup. Add to dry ingredients and whisk to combine. Add raisins as well as soaking liquid and whisk to form a thin, smooth batter. Pour over caramel sauce in prepared dish.

Step 5Peel apples, then quarter then and cut out core. Slice into thin pieces lengthwise. Layer over batter to form a spiral shape. Sprinkle over extra brown sugar.

Step 6Bake for 35 minutes until the pudding rising up between the apple slices is golden. Pour remaining caramel sauce over the hot pudding and return to the oven for 5 minutes.

Step 7Serve hot with vanilla ice-cream.
Recipe Notes
You can use sultanas or raisins.
