This recipe is a twist on the traditional magic cake. Layer Granny Smith apples at the bottom of your cake tin (or use canned pie apples if you're short on time) and just like magic, three layers appear: cake, apple custard and fudge!
Ingredients
- 4 eggs, separated
- 120g Woolworths Essentials Caster Sugar
- 120g plain flour
- 120g butter, melted
- 2 tbs water
- 2-3 Granny Smith apples, peeled and cored
- 1 tsp vanilla essence
- Pinch of salt
- 350ml milk
Method

Step 1Preheat a fan forced oven to 150 degrees Celsius.

Step 2Slice Granny Smith apples into slices half a centimeter thick. Place apples in a saucepan with 1 tbs water and stew on low for 6-8 minutes or until soft. Set aside to cool.

Step 3In a clean bowl, beat egg yolks with sugar until the mixture turns pale yellow.

Step 4Add vanilla essence, salt and melted butter. Whisk until combined.

Step 5Sift flour into the mix and whisk gently until combined. Add milk slowly and whisk until it resembles a pouring cream consistency.

Step 6In a separate clean bowl, whisk egg whites until stiff peaks form. Gently fold egg whites into the egg yolk and milk mixture.

Step 7Grease a 20cm x 30cm springform baking tin with, or line with baking paper. Lay the apple slices on the bottom of the tin. Pour the mixture over the apple slices.

Step 8Bake for 40-45 minutes. Remove from the oven and leave to cool for 30 minutes.

Step 9Serve warm with custard or a dollop of cream.
Recipe Notes
Use canned pie apples in place of Granny Smith apples for an even quicker version.
