Cocktail glasses at the ready! For a simple bevvy on a summer evening, you can’t go past the classic Italian Aperol Spritz. Full of sweet orange flavours and the slight bitterness of the Aperol, it’s perfect to enjoy before dinner.
Ingredients
- 400ml Aperol
- 400ml Prosecco
- 2 oranges
- 600 soda water
- 4 cups crushed ice
- 4 rosemary sprigs *to garnish
Method

Step 1Fill 4 large glass tumblers with crushed ice. Add 100ml Aperol and 100ml Prosecco to each glass.

Step 2Peel thin strips from the orange. Set aside. Juice 1 orange and divide between the glasses. Add the orange peels.

Step 3Slice the remaining orange and add to each glass. Top with soda water and garnish with rosemary sprigs.
