Cocktail glasses at the ready! For a simple bevvy on a summer evening, you can’t go past the classic Italian Aperol Spritz. Full of sweet orange flavours and the slight bitterness of the Aperol, it’s perfect to enjoy before dinner. - Greer Worsley

Ingredients

  • 400ml Aperol
  • 400ml Prosecco
  • 2 oranges
  • 600 soda water
  • 4 cups crushed ice
  • 4 rosemary sprigs *to garnish

Method

  • Step 1
    Fill 4 large glass tumblers with crushed ice. Add 100ml Aperol and 100ml Prosecco to each glass.
  • Step 2
    Peel thin strips from the orange. Set aside. Juice 1 orange and divide between the glasses. Add the orange peels.
  • Step 3
    Slice the remaining orange and add to each glass. Top with soda water and garnish with rosemary sprigs.
