Like an antipasto platter in a pastry, these quick-bake pasties are filled with ingredients straight from the deli counter - perfect for a picnic or in lunch boxes. - Greer Worsley

Ingredients

  • 2 sheets puff pastry, defrosted
  • 1/3 cup pesto
  • 4 slices tasty cheese
  • 8 slices leg ham
  • 16 slices salami
  • 1/2 cup char-grilled red capsicum strips
  • 1 egg, beaten

Method

  • Step 1
    Cut four circles from each sheet of puff pastry. On each piece, place 1-2 teaspoons pesto and spread to fill half the circle, leaving a border on the edge. Cut cheese slices in half diagonally and place one half on each piece of pastry, trimming to fit the semicircle. Add a slice of ham folded to fit, followed by two overlapping slices of salami. Finish with a couple of strips of capsicum.
  • Step 2
    Carefully fold the pastry in half to enclose the filling and press to seal the edge. Use the tip of a fork to press into the seal. Place pasties on the prepared tray and brush with beaten egg. Bake for 12-15 minutes until golden.
  • Step 3
    Enjoy hot from the oven or cold in a lunch box or picnic.
Recipe Notes

I used pre-sliced tasty cheese but you could use Swiss cheese or provolone.

Use a good quality store-bought pesto or make your own.

Vary the ingredients to suit your taste - you could include olives, marinated artichokes or prosciutto.
