Ingredients

  • 1 cup raw almonds
  • 1/2 cup raw cashews
  • 1/2 cup coconut milk
  • 2 tbs water
  • 1 tbs coconut oil
  • 3 tbs maple syrup
  • 1 punnet fresh raspberries
  • 1 punnet fresh blueberries

Method

  • Step 1
    Soak the almonds and cashews in water for 2 hours.
  • Step 2
    Process almonds and cashews in a blender or food processor until it looks like almond meal.
  • Step 3
    Add the coconut milk, water and coconut oil and process again. Add the maple syrup and blend until the mixture is smooth and creamy. Add more water if needed.
  • Step 4
    Refrigerate cream for 1 hour.
  • Step 5
    In tall parfait glasses, layer the cream and treats, using different toppings on each layer.
