This is a super easy and impressive treat - the thick, indulgent cream is perfect layered with fresh fruit.
Ingredients
- 1 cup raw almonds
- 1/2 cup raw cashews
- 1/2 cup coconut milk
- 2 tbs water
- 1 tbs coconut oil
- 3 tbs maple syrup
- 1 punnet fresh raspberries
- 1 punnet fresh blueberries
Method

Step 1Soak the almonds and cashews in water for 2 hours.

Step 2Process almonds and cashews in a blender or food processor until it looks like almond meal.

Step 3Add the coconut milk, water and coconut oil and process again. Add the maple syrup and blend until the mixture is smooth and creamy. Add more water if needed.

Step 4Refrigerate cream for 1 hour.

Step 5In tall parfait glasses, layer the cream and treats, using different toppings on each layer.
