An easy entree recipe, perfect for entertaining.
Ingredients
- 16 large green king prawns, peeled, deveined, tails intact
- 2 tbsp curry marinade
- 1 tbsp finely chopped fresh coriander, plus extra sprigs to garnish
- 1 tsp freshly grated ginger
- 4 spring roll wrappers
- 1 egg, whisked lightly
- 1 tsp black sesame seeds
- Mango chutney, to serve
Method

Step 1Score 3 small cuts in the underside of each prawn (this will prevent the prawns from curling).

Step 2Combine marinade, coriander and ginger in a medium bowl. Add prawns and toss to coat.

Step 3Cut each spring roll wrapper into 4 squares. Fold one corner up and place prawn on top. Brush wrapper with egg and roll to enclose prawns. Brush with egg and sprinkle with sesame seeds. Repeat with remaining wrappers, prawns, egg and sesame seeds.

Step 4Spray basket of of air fryer with oil. Place prawns, in 2 batches, in basket and spray with oil. Cook on 180C for 7-8 minutes or until golden and cooked through. Place on a serving plate with chutney. Sprinkle with extra coriander and serve.
